Shreveport as a stopping place

We live in England and have been to the U.S many times.
Next year we are doing a road trip from Atlanta,Ga down to Mobile, Biloxi, Gulfport, New Orleans, Baton Rouge and up toward Shreveport on our way to Texarkana and on to Memphis(we have been to Memphis many times).
The question is, what%26#39;s your opinion of our planned trip and any idea%26#39;s and suggestions what to see and do on our trip around the gulf coast. We are not gamblers so casino%26#39;s and stuff is not really an option for us.
Like I said, we have seen Memphis, Nashville, Atlanta, Smokie mountains but next year we want to see the southern coast and what is has to offer.
How much has changed since Katrina. We have friends in Mississippi and when we were there this year, they told us it was still pretty messed up down in some parts.
So we will be grateful for local opinions for our planned trip.
